Cajun Bean Soup

1bag of bean & barley mix @Trader Joe's
2 sweet potatoes
1chopped onion                                               1lbs.sausage(opp) 
1 chopped bell pepper                                        1box chicken broth
 or vegie broth
3 chopped carrots                                             
Lots of garlic                                               chopped tomatoes
chopped basil, chopped parsley, chopped cilantro
1 bunch chopped kale
1tsp. olive oil
1 bay leaf                                                 

Seasoning such as:
A sprinkle of Cumin, salt to taste, fresh thyme and rosemary, turmeric.
play with your spices - be creative. (Next time use 1 can of coconut milk with veggie. broth and add cinnamon). 

Soak your beans overnight in a large pot with double amount of water. Rinse and cover again with water cook for 2 hours adding all ingredients except salt. Add salt at end of cooking.
